  • Amy's Brown Rice and Veggie's

    Does anyone know of a similar recipie to make this? I know it has brown rice, it has some kind of thin mushroom that looks more like an onion than a muchroom, strips of tofu, and various vegetables. This is probably my ultimate favorite convenience food dish - but it is very pricey too and doesn't go on sale very often. I'd love to make it myself so I could have it more often.

    Stuff I already have: brown rice, soy sauce, mushrooms, fresh brocoli, assorted frozen veggies.

    Any ideas?

    I haven't tasted this because I've always made my own "brown rice & veggies" according to what I have on hand.

    It tastes best the very first meal, this is one item that doesn't seem to have its flavor enhanced by overnight refrigeration - if I do have leftovers, I keep the extra brown rice separate from the stir-fried veggies.

    I use what's on hand, and especially like the stir fried veggies to always contain sliced carrots, some shredded purple cabbage, diced onions, chopped celery & minced garlic to taste.

    I just fry the veggies in as small an amount of olive oil, and when almost done I turn up the heat and add some SESAME OIL and quickly finish.

    I spread the already freshly cooked brown rice on a plate and cover with the "stir-fried" veggies.

    Sometimes I also add a scrambled egg; and just about any veggie you like can be incorporated - sometimes I put frozen baby peas in at the very very end, so they only thaw and don't actually cook, they are so crunchy & sweet that way.

    I don't often stir fry the rice, cuz it takes alot more oil to ensure it doesn't stick, and my body, alas, doesn't suffer from an olive oil or sesame oil deficiency.
